You know you’re getting older when the highlight of your week is buying a new refrigerator and vacuum.

But seriously, c’mon… who doesn’t love shopping for home appliances? 

Alright… I’m sure you don’t want to hear much more about my exciting trip to Sears, so instead, how about I wow you with some pretty pictures of watermelon? And specifically, this watermelon salad with sweet chipotle dressing.

It doesn’t take a lot to make watermelon shine in a recipe. I love watermelon tossed with a bit of lime juice and fresh mint, but I also love to combine it with chipotle for a spicy and sweet combo. This watermelon salad uses the best of summer produce along with a sweet chipotle dressing. The prep is minimal and it’s the perfect recipe for summer picnics or eating at home on your back porch.
