WATERMELON BITES WITH CASHEW CHEESE AND BASIL

I know that summer is ending. I see the sun setting earlier and earlier and the storm clouds rolling in. It feels like tea weather and I’ve started wearing my oversized cat lady sweater around the house again (shhh… don’t tell anyone).
But, can we just put all that aside for a moment? Can we just be in denial as we drink (healthy) iced mocha frappes, listen to (bad/good) pop music, and slice open a giant watermelon, spilling the juice all over the kitchen floor?
I plan to be in this wonderful place of denial for just a bit longer. Care to join me?Good.

These are one of my favorite summer treats. Not only do they satisfy a variety of dietary needs (vegan, paleo, gluten-free), but the ingredients are simple (you probably have most of these items in your kitchen already) yet they somehow result in a rather fancy-looking dish.
