SPICY JALAPEÑO SESAME SALMON


There’s nothing like fresh seafood in summer. Yum.
And – this is somehow coming from the girl who didn’t start eating seafood until her late twenties… I think that says something. 
My body has been craving fish recently so I’m taking it as a sign that I probably need more omega-3’s and good fats in my diet right now. Point taken.
One of the things that I love about cooking seafood is that it marinates and cooks quickly – making it a perfect entree for a busy evening after work or on a weekend when you don’t want to spend all day in the kitchen.
This spicy jalapeño sesame salmon is flavorful, spicy to your liking, and is versatile when it comes to cooking methods. If you’re looking for a quick and healthy dinner, this one’s a winner!

Since I’ve been playing around with cooking more seafood this summer, I’ve learned a few tips:
  • Make sure the portions are even. Fish cooks by thickness (rather than mass or surface area like meat) so try to get the portions consistent.
  • Only turn the fish once during cooking. This helps to make sure it won’t fall apart and will retain moisture.
  • Don’t overcook your fish. The USDA recommends cooking fish to an internal temperature of 145 degrees F and I’ve found that anything above this can really dry it out. The best way to tell if your fish is done is to temp it with an instant-read thermometer. It is far more precise than playing the guessing game.

INGREDIENTS                     
  • ¼ cup coconut oil
  • 2 tablespoons coconut aminos or tamari
  • 1.5 teaspoons honey
  • 1 tablespoon sesame oil
  • ¼ cup lime juice
  • 2 whole jalapeño peppers, sliced
  • ½ teaspoon crushed red chile flakes
  • 2 garlic cloves, minced
  • 1-inch piece of fresh ginger, minced
  • 4 (4 - 6 oz) portions of salmon
INSTRUCTIONS
  1. In a small bowl, whisk together the coconut oil, coconut aminos/tamari, honey, sesame oil, lime juice, jalapeños, red chile flakes, garlic, and ginger. Arrange salmon fillets in a wide, shallow baking dish and pour marinade over them evenly. Let marinate for up to 30 minutes.
  2. Preheat oven to 400 degrees. Bake for 20 - 25 minutes (flipping once) or until the salmon reaches an internal temperature of 145 degrees F.
  3. Serve warm with your favorite side dish.
