STRAWBERRY AND WALNUT PARFAIT WITH LEMON COCONUT WHIPPED CREAM


 Do you know how hard it was to put this strawberry and walnut parfait with lemon coconut whipped cream down and make it to my hot pilates class on time? Really hard. Just being honest here.
I can’t believe I am just now getting into coconut whipped cream. Have you seen this all over the internet lately? Coconut whipped cream is a dairy-free version of whipped cream using full-fat canned coconut milk. Yum.
I’ve known about coconut whipped cream for awhile, but since I don’t have a KitchenAid or hand mixer, I’ve always let this stop me. Then I discovered the dangerous realization that you can make perfectly good coconut whipped cream by hand with a whisk and it still turns out amazing. My version of this is completely sugar-free and adds just a touch of lemon zest and lemon juice. I have a feeling there will be a lot more lemon coconut whipped cream in my future.
And you know what goes really well with lemon coconut whipped cream? Fresh strawberries.

This strawberry and walnut parfait is made of only 4 simple ingredients and they’re all from real, whole foods! Plus, it’s dairy-free, gluten-free, sugar-free, grain-free, vegan, and paleo!
When I enjoy dessert, my preference is to stay away from refined white sugars and opt for healthy treats that nourish my body. For this reason I didn’t add any additional sweeteners to this, but if you want a sweeter version you can always use alternative sweeteners (which aren’t as harsh on the body as refined sugar) and add a touch of pure maple syrup to the lemon coconut whipped cream or drizzle the parfait with honey.
Or, if you want a sweeter version without the maple syrup or honey, you can add a couple of drops of vanilla stevia to the whipped cream as well. This will give it a sweeter taste without any extra sugar.

STRAWBERRY AND WALNUT PARFAIT WITH LEMON COCONUT WHIPPED CREAM

INGREDIENTS
  • 14-oz can full-fat coconut milk, refrigerated overnight (or at least several hours)
  • ½ teaspoon (organic) lemon zest
  • 1 tablespoon (organic) lemon juice
  • 1 pound (organic) strawberries
  • 1 cup walnuts, chopped
  • Fresh mint and lemon slices for garnish, optional
INSTRUCTIONS
  1. Add coconut milk to a large bowl along with lemon zest and lemon juice. Whisk by hand or use an electric mixer for 2 minutes, or until fluffy.
  2. Hull and slice strawberries.
  3. Divide ingredients amongst four glasses and layer strawberries with walnuts and whipped cream. Garnish with fresh mint and/or lemon slices if desired.
