Gossip alert… are you ready for this? I’ve heard rumors that strawberries are coming early this year and will be available in farmers markets as early as this weekend (at least in Seattle). Whoa. Now that’s my kind of gossip.
One thing’s for sure: you will definitely find me at the farmers market this weekend to check it out. I’ll be sure to report back.
Strawberries (and blueberries) have such a brief season here that you have to get them right away. I’m a big berry fan and nothing can compare to fresh local berries from the farmers market.

Yes? Awesome! You’re going to love this version! This is a sweet and zesty take on traditional massaged kale salad that adds maple syrup and lime to the dressing for just the right amount of sweetness. I swear you won’t know if you’re eating salad or dessert.
And, if you’re a massaged kale salad newbie, don’t fear! Massaging kale is a way to soften the tough leaves and make it a softer texture which is preferable for salads. MASSAGED KALE SALAD WITH STRAWBERRIES AND COCONUT-LIME DRESSING

- 2 tablespoons coconut oil, melted
- 1 tablespoon maple syrup
- 1 tablespoon lime juice
- ½ teaspoon lime zest
- pinch sea salt
- 2 bunches curly kale, de-stemmed and torn into pieces
- 2 cups strawberries, sliced
- ¼ cup coconut flakes
INSTRUCTIONS
- Mix coconut oil, maple syrup, lime juice, zest, and sea salt together.
- Add the kale to a large bowl and drizzle dressing over.
- "Massage" kale for five minutes, until leaves are soft and tender.
- Divide amongst bowls or plates and top with fresh strawberries and coconut flakes.
