You know you’ve had a good weekend when you find yourself feeling refreshed and completely relaxed on a Sunday evening. Somehow (for the present moment at least) I seem to be finding the balance between fun and productivity and I couldn’t be happier.
My weekend started off with assisting a class at my local Co-Op and teaching teenagers how to bake. On the way home I had the pleasure of enjoying the most beautiful sunset I’ve seen in quite some time. I love those moments when Mother Nature takes your breath away.
On Saturday I got to spend the day outside enjoying Bastyr University’s annual Food and Herb Fair. (For now, let’s just say that I learned some new fermentation skills and there are going to be some exciting recipes coming your way!)
And, to top off my weekend, Sunday involved a trip to the farmers market, good coffee, and an inspiring yoga class. There are lots of high points to my weekend, but I think the greatest theme in my life right now is community. I feel so grateful to be surrounded by so many amazing fun, interesting, and supportive people in my life right now and I’m grateful to each and every one of you. (That includes you, dear reader…)
Speaking of things I’m grateful for, food always comes to the top of my list. There are so many amazing foods in season at the moment and if you haven’t had the chance to visit your local farmers market, there’s no time like the present!
For this recipe you’ll want to start with fresh, crisp baby bok choy. If you don’t have access to baby bok choy you can substitute any Chinese cabbage of your choice. I love this recipe because it’s quick and the ingredients are easily adaptable. Baby bok choy is tender and cooks up quickly so this is the perfect side dish for an easy weeknight meal. You can adjust the heat by adding red pepper flakes (or leaving them out entirely) and add Aminos or Tamari (if desired) for extra flavor and saltiness.

INGREDIENTS
- 1 tablespoon sesame oil or coconut oil
- 3 baby bok choy, chopped
- 1 tablespoon sesame seeds
- Bragg's Liquid Aminos, Coconut Aminos, or Tamari to taste (optional)
- red pepper flakes to taste (optional)
INSTRUCTIONS
- Add oil to a pan over medium heat.
- Add the bok choy and saute for about 5 minutes, or until tender. Top with sesame seeds and add Aminos or Tamari and red pepper flakes to taste, if desired.
