PINEAPPLE COCONUT MUFFINS: GUEST POST BY COOK IT UP PALEO

While I’m out of out town, a few of my friends are keeping you full with new, delicious recipes on the blog! These tropical muffins come from Heather of Cook It Up Paleo, an 18 year old blogger with a ton of creative, enticing recipes on her blog! Thank you so much Heather for sharing this recipe on HTG! Hey everybody! I’m so honored that Tess asked me to guest post on her blog! Tess is so talented and sweet, and I’m really excited to be posting!
When spring comes, I start wanting to eat fruit.  It starts coming into season in the stores and it’s so fresh and delicious.
pineapple muffins1Pineapple is one of my favorite fruits.  I don’t know what it is, but I could eat whole pineapple in one sitting, except that my mother and friends love it just as much as I do.
I also have an affinity for coconut.  I just can’t understand people not liking coconut.  To each their own, but I like to put some form of coconut into almost everything I cook.  This recipe has coconut oil, coconut flour, coconut cream, and coconut flakes!

These muffins are simple to make and are so moist.  They make a delicious snack or dessert to bring to all the graduation parties that are coming up!

PINEAPPLE COCONUT MUFFINS

INGREDIENTS
  • 6 eggs
  • ⅓ cup coconut cream
  • ½ cup coconut oil, melted
  • ¼ cup maple syrup
  • 1 cup finely diced fresh pineapple
  • ½ cup coconut flour
  • ¾ cup coconut flakes
  • ¼ cup chopped macadamia nuts (omit for nut-free)
  • ½ teaspoon baking soda
INSTRUCTIONS
  1. Preheat oven to 375 degrees Fahrenheit and grease a muffin pan with some coconut oil.
  2. In a large mixing bowl, whisk the eggs. Stir in the coconut cream, coconut oil, maple syrup, and pineapple.
  3. Add in the coconut flour, coconut flakes, macadamia nuts, and baking soda.
  4. Scoop the batter into 8 muffin cups and bake for 30 minutes, or until they pass the toothpick test.
