A runny egg yolk makes any meal a thousand times better.
And guys, you don’t even need any dried herbs or spices! All you need is this new wonderful ketchup that I found at my local health food store last week and have become obsessed with. As a long-time team mustard girl- this is a girl who grew up dipping her potato chips in mustard (and now I’m hiding my face because did I actually just admit that?)- I never knew I missed ketchup so much. And I certainly never knew that spiced ketchup was what I needed in my life to add to, um anything and everything. THIS KETCHUP HAS JALAPENO IN IT.
I don’t know why I’m all caps yelling this to you, if only because this is true food love. A worthy moment of the all caps.
The jalapeno adds spice to the hash that is balanced out by the sweetness and acidity of the tomato. The whole ketchup with eggs thing is something I’ve honestly never even tried before because I was never a big ketchup fan growing up, but now I get it.
I totally get it, and it’s fantastic.
This meal is as simple as browning ground beef with vegetables, stirring in that beautiful ketchup and broiling a few eggs on top. It’s nothing difficult, but I think a breakfast skillet is also one of the most beautiful meals you can make. I love the rustic look of an unassuming hash spotted with orange runny yolks in a cast iron pan.
Fresh herbs on top adds a pop of color and flavor that I recommend not skipping. Parsley or cilantro are the best choices, whichever you prefer.
Breakfast, lunch or dinner- cook it whenever you have 15 minutes to spare!
