CARROT GINGER LIME JUICE

Carrot Ginger Lime Juice
I’m thinking a lot about what I want to manifest this year.
I want to create a happy home, a healthy body, and feel really accomplished in my career. I want to feel joy, love, and a sense peace and well-being along the way. After all, it’s not just about the destination, but it’s about how we feel on the journey that matters.
This year I want to do more, be more, and give more back. I like the idea of being flexible and leaving 2015 open to possibility, but I also want to put some really good vibes out there. 2015 is gonna be the year for us. I can feel it.
So let’s get things on the right foot with some fresh juice, ay?
After a major kitchen reorganization last weekend, I found a better place for my juicer and for some reason, that simple change made the entire kitchen seem more put together.
A few words of advice: if you’re struggling with eating healthier, a good place to start might simply be reorganizing your kitchen. I’ve always found that when I make appliances more accessible and stock up with fresh food it makes healthy eating more achievable.
In the process of cleaning out the fridge I came across some carrots that definitely needed to get used up, a knob of ginger, a random wedge of lime, and half a pomegranate. This could only lead to one thing: fresh juice!

This juice is sweet, tangy, and has a slightly spicy kick from the fresh ginger. I was impressed with how well it worked as a pick-me-up in place of coffee over the weekend and it gave me plenty of energy to power my reorganization project.
Note: Although I love carrots and always recommend carrot juice as a recipe for beginners, I do want to mention that carrot juice has a lot of sugar. If you are on a low sugar diet or need to reduce your sugar intake, you can sub some (or all) of the carrots out for a veggie like cucumber or celery and leave out the pomegranate.
