Do you have your cup (or 4) of coffee with you? And your thinking cap on? Because I need your help today! So, say someone has 4 cups of coffee in the morning. Each cup is filled half way with coffee and topped off with hot water (which would make for a weak cup of coffee I know). But, do these 4 cups of 1/2 coffee and 1/2 water = 2 cups of water + 2 cups of coffee?
I am hoping you said yes, because it’s been cold here these past few weekday mornings and I am this “someone”. I’ve been neglecting my water intake, very often “flavoring” my water with coffee. In the same way, I’ve been neglecting meal prepping, very often deciding what’s for dinner while I am in the middle of chopping onions and chomping on homemade breakfast (or anytime) bars. Which brings me to one thing I haven’t been neglecting to do…
Spiced Pumpkin Pecan Rice Krispie Bars #FueledForSchooL
You see, most weekends during the school year, I bake up a batch of breakfast bars or breakfast cookies for the course of the week. This way, no matter how chaotic our mornings may be, we have a grab and go, nutritious, breakfast on hand! This past weekend, I almost neglected my breakfast prepping and so my daughter and I found ourselves at Target on Sunday night, picking up some supplies to make some Spiced Pumpkin Pecan Bars with. As we walked past the cereal aisle, my daughter suggested we add some Rice Krispies Cereal to these bars for some “pizzazz”!
Spiced-Pumpkin Pecan Rice Krispie Bars
As it was late, I got home and set about making these bars:
(now these bars are a cinch to make and are ready in less than 30 minutes so can be made in the morning, so they can be enjoyed warm – but since high school starts here in Gwinnett County, Georgia before the sun rises, I wanted to get these done before I went to bed).
 ➡  I first preheated the oven to 375 degrees.
 ➡ Then, I added the following 8 ingredients: 1 cup of pumpkin puree, 3 eggs, 1/2 cup of pecan pieces or chopped pecans, 1/4 cup coconut sugar, 2 1/2 cups of Rice Krispies cereal, 1/2 teaspoon of baking powder, 1/2 teaspoon of pumpkin pie spice, and 1 teaspoon of vanilla, to a bowl and mixed them together.
➡ I then lined a 9×9 baking tray with parchment paper and these bars were popping out of the oven, smelling mighty delicious in 20 minutes!
All that’s left to be done is grab your 4 cups of water + coffee and dig in!  😆

Spiced Pumpkin Pecan Bars
Prep Time: 5 minutes
Cook Time: 20 minutes
Total Time: 25 minutes
Yield: 12 bars
Serving Size: 2 bars
These bars are ready in a cinch and are a better-for-you breakfast or snack option!
Ingredients
  • 1 cup Pumpkin Puree
  • 3 eggs
  • 1/2 cup pecan pieces or chopped pecans
  • 1/4 cup coconut sugar (or 1/2 cup coconut sugar if you want a sweeter bar)
  • 2 1/2 cups Rice Krispies Cereal
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon pumpkin pie spice
  • 1 teaspoon vanilla
Instructions
  1. Preheat oven to 375 degrees
  2. Place ALL the ingredients in a bowl and mix till well incorporated
  3. Line a 9x9 baking tray with parchment paper
  4. Pour Spiced Pumpkin Pecan Bar mix into parchment lined baking tray
  5. Bake 20 minutes
