Sometimes I get crazy ideas in my head.
Crazy ideas like a waffle that tastes like pepperoni pizza.
Search pinterest for pepperoni pizza waffles, and you get pictures of people folding a piece of pizza before sticking it into a waffle maker. Is that a thing? I’ve never heard of it before.
But what if I don’t want to stick a piece of pizza in the waffle maker, but just want a waffle that tastes like pepperoni pizza instead? In my mind, a waffle that tastes like pizza is less bizzare than folding your pizza and pressing it into a waffle.
pepperoni pizza wafflesWith my pizza waffle recipe in mind, I finally decided to try nutritional yeast for the first time! I knew about the hype, but I nevered bother to give it a try. It really does add a nice “cheesyish” flavor to things! And I like the flavor it adds to these waffles. With the nutrional yeast, pepperoni, tomato paste and italian seasoning, these soft, slighly crispy waffles taste like a piece of pepperoni pizza! They make a fun, dipable snack to serve guests/family members.
It’s a healthier, easier way to get that flavor of pizza that most people miss when they don’t munch on grains. Plus it’s just kind of fun.
You can leave this post knowing that my waffle/plantain obsessions haven’t been sidetracked yet. Do you like the idea of more plantain recipes, or are you thinking, “seriously, plantains again?”? I really would love to know!
PEPPERONI PIZZA WAFFLES

Serves: 4 waffles
 
INGREDIENTS
In the Blender:
  • 1 Large green plantain (about 1 cup pureed)
  • 2 Eggs
  • 3 Tablespoons avocado oil + more for oiling the waffle maker
  • 2 Tablespoons tomato paste
  • 1 Teaspoon apple cider vinegar
  • 3 Tablespoons nutritional yeast + more for sprinkling
  • ½ Tablespoons Italian seasoning
  • ½ Teaspoon sea salt
  • ¼ Teaspoon garlic powder
  • ¼ Teaspoon onion powder
Everything Else:
  • ¼ Cup tapioca starch
  • 1 Teaspoon baking soda
  • 3 Ounces pepperoni (Applegate brand)
  • 1 Can/jar organic pizza sauce (I like this
  • brand)
INSTRUCTIONS
  1. Peel the plantain and place it in a high speed blender. Blend until the plantain is well broken up and beginning to smooth out. Add the rest of the blender ingredients and blend for about 1 minute, until the batter is smooth, You don't want any whole plantain pieces left.
  2. Pour the batter into a medium sized mixing bowl.
  3. Heat your waffle maker per its instructions.
  4. While the waffle maker heats up, stir in the baking soda and tapioca starch. If you're using the large Applegate Brand slices, cut the pepperoni slices into 8 pieces each. Stir the pepperoni into the batter.
  5. Pour the pizza sauce into a small saucepan over medium-low heat.
  6. Oil your waffle iron with avocado oil and use ⅓ Cup measuring cup to scoop batter into the center of the waffle maker. Sprinkle the scoop of batter with additional nutritional yeast, close and cook until golden brown. Transfer the waffle to a cooling rack and repeat with the remaining batter. The recipe will yield 4 waffles when using ⅓ cup batter for each waffle.
  7. Serve the waffles with the warm pizza sauce!
