Gluten-Free Coconut Avocado Fries

Hello, beautiful faces.
Before I get to knocking your socks off, I have to apologize for my absence as of late. It has been a whirlwind of a few months and due to health problems, I have had to cut way back on life and seriously focus on just the basics. Which included: Putting on “clothes” (loosely defined); keeping child alive, fed, and happy; and fitting in endless doctor appointments, blood work, and other fun tests. Point being, blogging fell to the bottom of the to-do list. As did laundry.
But here’s what rose to the top: Keeping my diet on fleek (as the kids say). Or translation: Eating clean food and simple food, that had big flavor but didn’t take up a huge amount of my time. And could keep me feeling full and healthy throughout the hectic days. Because really, when your body feels out of whack, the only thing you can control is what you put in it. Or on it. But let’s be real, sometimes you can only manage sweatpants and a shirt. That you may or may have not already worn. The day before.
Which is why I am giving you these Coconut Avocado Fries. They feel indulgent and satisfying all while being great for you and that body. They also happen to be so simple that you can whip them up/pack them up for a mid-day snack at home, or the office, or the doctors office. Or for a last minute dinner party. Because these little bites epitomize the idea of doing as little work as possible while still getting big results. A skill that is super important when trying to save energy.
So whether you’re facing a busy schedule, the beginning of the school year, or health challenges, remember that you can find peace and balance in food. And make these avocado fries as a reminder that taking care of yourself can also mean treating yourself.

Now a little more about specifics. Apparently, they are a thing. A thing that usually requires panko or breadcrumbs, egg, and olive oil. All ingredients I have nothing against. But if you want something fast and super healthy, that doesn’t require an oven or a pan of bubbling canola, then these will be your new favorite finger food.
The recipe is simple: toasted coconut flakes + drizzle of honey + sliced avocado. That’s it. Of course, you can play around with crushed nuts, sesame seeds, flavored honeys and jams, or basically anything “breadcrumb-like” and “sticky.” So please, get adventurous and then post your results in the comments below, on Instagram, and on my Facebook page.
 COCONUT AVOCADO FRIES
Ingredients
Serves 2
  • 1 large avocado, cut in half and pit removed
  • 1 tbsp honey or agave syrup
  • 1/4 cup finely shredded unsweetened coconut, toasted
Directions
To cute avocado into “fries”, take one half of the avocado and make 3 long slices, lengthwise. Then use a spoon or a fork to carefully lift the avocado meat from the skin. Place the avocado slices into a medium mixing bowl or a rectangular container. Repeat with the other avocado half.
Drizzle the honey over the avocado fry slices and use your hands to carefully rub it over the slices, top and bottom. Then sprinkle one side with the coconut slakes, patting with your hands to make sure it sticks. Then, rotate the avocado fries and sprinkle the other side. Repeat until they are covered. Then pack them up for a SOS snack. Or chow down immediately.
