It’s that time of year again.
It’s that time of year where life starts getting hectic, schedules get busy, and dark, leafy greens are everywhere.
Do you ever get bored with collard greens? I hear from a lot of folks that they just don’t know what to do with them. If this is you, let’s talk about some inspiration:
- Put ’em in a green smoothie! After all, green smoothies aren’t just for kale! Here’s a video tutorial to show you how.
- Add ’em in soup! Try this Black-Eyed Pea and Collard Greens Soup.
- Hide ’em in a casserole! And not just any casserole: a vegan, gluten-free Lentil and Greens Casserole with Millet-Amaranth Crust.
- Make ’em into a savory side with the addition of onions, leeks, shallots, and garlic.
- Make some Spicy Collard Greens with a little broth, red pepper flakes, salt, and pepper. No bacon needed!
- Use ’em to hide sea vegetables in a salad. For reals. This Gingered Sea Vegetable Salad is full of a variety of vitamins and minerals because it contains arame (a sea vegetable) but it’s carefully hidden among collard greens in a sweet and gingery sauce. I promise you’ll love it.
And, for my newest collard green favorite: collard greens coleslaw. I love the texture of collard greens in this salad, especially when paired with fresh parsnips and carrots.
Most coleslaws add sugar or honey in the dressing to sweeten it, but I left out the extra sweeteners and opted to add a fresh grated apple into the mix instead. Whether you’re looking for some healthy options for a weeknight side dish or planning something special for the holidays this salad fits the bill! And you won’t have to be bored with your collard greens any longer!

COLLARD GREEN COLESLAW

Serves: 6
INGREDIENTS
- 1 bunch collard greens, de-stemmed and shredded
- ¼ teaspoon salt
- 2 tablespoons raw apple cider vinegar
- ¼ cup olive oil or natural (sugar-free) mayonnaise
- 1 medium apple, shredded
- 2 medium carrots, shredded
- 2 medium parsnips, shredded
- 2 green onions, diced
INSTRUCTIONS
- Add shredded collard greens to a mixing bowl and sprinkle with the salt.
- Using your hands, "massage" collard greens for 1 - 2 minutes. This helps to soften the greens, make them taste sweeter, and the salt draws a bit of moisture out. Drain any juices that have collected in the bottom of the bowl.
- Add remaining ingredients to the bowl. Mix well. Refrigerate until serving.
