BACON WRAPPED SWEET POTATO WEDGES

This is less of a recipe and more of an idea or process. You only need two ingredients to make bacon wrapped sweet potato wedges, and they’re both right there in the name. All you have to do is, well … cut up a sweet potato and wrap each wedge in 1/2 slice of bacon! Simple, right? Right.
The only way you won’t love these is if you don’t like bacon or sweet potatoes, in which case I don’t fully understand you. Okay, I didn’t like sweet potatoes at one point so I can kind of get that, but not liking bacon? And I don’t mean “not liking bacon” as in you’ve been taught that it’s unhealthy so you avoid it. I mean actually not loving the fatty, salty taste of a slice of crispy pastured raised bacon. Wrap it around something sweet and starchy and you have the perfect sweet and salty combination that we all crave … Am I making you hungry? That’s the goal ;).
You can serve these any time of day. Whenever you can find a good reason, make bacon wrapped sweet potato wedges. For breakfast? Yes. With a burger or salad for lunch? Sure. As a dinner side dish? Of course. As an appetizer for guests? Definitely. For dessert? Sounds good to me!
With Thanksgiving and Christmas right around the corner, they’d even make a perfect Holiday appetizer to hold over guests until dinner. Especially served with a healthy homemade mayo.
I can’t really think of a food situation where bacon wrapped sweet potato wedges isn’t the answer.
BACON WRAPPED SWEET POTATO WEDGES

INGREDIENTS
  • 1 Small-Medium Sweet potato
  • About 8 Slices of thick cut bacon
INSTRUCTIONS
  1. Preheat oven to 425 degrees.
  2. Slice the sweet potato into wedges. I got 16 wedges from my potato, but it will vary depending on size o the potato and your wedges. The wedges should be thicker than a standard fry, but not so fat that half a slice of bacon won't wrap around each one.
  3. Cut the bacon in half. I prefer a thicker sliced bacon because the potato will have more time to cook through without the bacon burning.
  4. Wrap each wedge is half a slice of bacon, making sure that the bacon overlaps itself. Where the bacon overlaps, set the wedge face down on a parchment lined baking sheet. Repeat until all of the wedges are covered.
  5. Bake for 20 minutes. The bacon should be almost completely cooked and browned on the bottom. Flip over each wedge, careful not to undo the bacon. Bake for an additional 5-10 minutes, or until the bacon is browned and the potato is cooked through. If necessary, stick each wedge with a toothpick. Transfer the wedges to a paper towel lined plate to cool before serving.
NOTES
You can easily multiply the recipe to fit your needs. Just make sure you have half as many slices of bacon as you do sweet potato wedges.
